What kind of numbers could I pull with all of that, including the intake?

A 100 HP shot of nitrous is anywhere from 85-110 horse gain the cold air is usually good for about 10-15

What are your overall goals for your car. That will depend on a lot of the advice and what you actually do.

I've had my sixxer for going on 10 years and haven't touched the motor short of o/r h-pipe and mufflers. Unless your willing to dig into the motor or go with a power-adder then most bolt on are really a waste of money. You won't get nearly the gains you want.

That being said, I would start upgrading the support components. Primarily your suspension and rear. Get an 8.8 rear with whatever gears your want and that will set a good base for if you want to start really getting power out of the motor.

Really what it comes down to is what you want and expect and what you are willing to spend.

Yes it will but not much. But you'll reach speeds faster.

Which should come first, the tune or the posi and gears? This is all going to be spread out some.

Well when you change gears your speedo will be off. But when you get a tune you'll be able to use the programmer that comes with it to calibrate the speedo change. So I'd say tune before gears. And gears with the posi of course.

Still slow, its still a v6 remember. As for your top speed. Its already electronically governed at 118 so unless you remove that it wont change.
