clutch plate replacement checklist?

After replacing my heater core, the next item on my list is to repair the clutch.

68 mustang, 289 v8 w/ a 3spd manual

Right now, when I take off in 1st, I have to release the clutch completely before applying any acceleration, otherwise the back end just chatters something fierce.

I purchased my clutch kit (Ram kit, thoughts?), but as I started reading some other treads, I see it's pretty much a standard process to have the flywheel resurfaced.... Is there anything else I should consider replacing along with this job? Is the throwout bearing that comes with this kit good quality? anything else that I should consider replacing?

I'm don't have plans of swapping the motor anytime soon (only around 78k on it), or putting in a big transmission upgrade.

Thanks again for your feedback!
