Mine only sees good warmish weather so just want less noise and good grip.

Take a look at the Cooper RS3-S, those are the one that come on the Roush cars. Love mine. Approaching 14k on mine and they have been great. Decent tires and under $300 each. Have not used on the track, but for street are a great tire.

I just picked up a bolt about 3" long and 1/2" wide in my rear tire, so I needed to buy 2 because of the tire wear.
I picked up a set of continental extremely contact DW for really cheap at tire rack!
Size 285/35/19 for the rear $305 for 2 tires shipped! (they had 6 at that price)
So I currently have p zero 275/40/19 on the front.
I bolted them on but have not driven it yet I will give some feed back when I get a chance to drive it!

I think the answer depends on how and where you drive the car.
For mixed Street/Road Course action I would also recommend the Bridgestone Potenza S04. I used the for a few track seasons. Got 8 track days out of them and a couple thousand street miles. I have a review thread on them as they aged here: https://themustangsource.com/forums/...review-532159/
If you see more than 2 or 4 days at the track you probably want something in the Extreme Performance category, or just plain slicks. My next track tire will be Bridgestone Potenza RE71R.
For the street there are a lot of options. The stock Pirellis were good, but only when it was over 75 degrees and they had less than 10k miles on them. S04 would be a better choice. I am currently running Conti Extreme Contact DWs. They are very good in wet and grip pretty well when it's warm and dry.

Yeah, I heard something about that while at America's Tire for my wife's car. I might get the new ones for the back, or hope there is a big sale for the old ones, and get those for the back. I like them so far on the front....my Boss will be paid off in two months, will start looking for the back tires then.

I have these on a couple cars. They are a great tire.
Has anyone tried the MT tires for the track?

I got the PS4's put on the back, and the original Super Sports on the front. Liking them so far.....will be taking the Boss to Palm Springs soon, going the windy back way....will really put them to the test then.

I'm looking at throwing on some 305/30 or 35ZR19 Michelin Pilot Sport cup 2 or Nitto NT01 on some new 19x10.5 or 19x11 APEX wheels coming out in July but this will be mostly for track use. I have to drive the car to the track so I can't get too aggressive. My other two sets of wheels have the original Pirellis on them and my Forgestar CF5Vs have some Mickey Thompson Street Comps that I've been using for both track and street. The MTs are a good choice for those who have dual use but they're not great out in the cold or on wet roads.

Dayve,
Spend the money and get the front as it honestly is never good to mix different tires ( even in the same brand), as compounds change, tread patterns are different, and frankly if they were quite old they are likely hard as rocks. Just a suggestion from an old man , who definitely does not know it all ( still learning ) , but have been sponsored by 4 different tire companies over 37 years of racing.

I have Nitto NT-555 G2's in 275/35/20's on 20x9.5 rims w/45mm offset on all 4 corners. I know thru personal experience their absolutely horrible in wet conditions and also have a very harsh ride quality on uneven road surfaces. Needless to say, you most definitely feel practically every road imperfection to say the very least. At any rate, I'll be making the switch to "OEM" 2007-09 GT500 18x.9.5 wheels by hopefully late spring/early summer and pairing them with Continental Extreme Contact Sport in 285/40/18 square on all 4 corners. Perhaps making the switch to 285/40/18 from 275/35/20 will provide a smoother ride quality due to providing both a taller and softer sidewall

The low profile tires handle very well but the ride is something else. Also not pot hole friendly at all.
Job well done sir!!
