What is the difference between shifting with....
 
....paddles and simply shifting with the automatic center console shifter? Is there any fundamental difference in what is happening with the gears? Thanks.

You just don't have to take you hand off the steering wheel with paddle shifters. They make it possible for a little more control. They don't make the trans act any differently

Plus, the current 2011-2012 shifter does not have control over every gear. And the transmission will still automatically upshift or prevent a downshift if the shift is oustside it's programmed WOT shift points.

1-2-3 will not up shift. It stays in the selected gear to the rev limiter or until you shift it.

Usually cars equipped with paddles have dual clutch transmissions

The cars with paddle shifters I've seen were automatic and no dual clutch that I am aware of. BMW Z4 for one.

The BMW Z4 uses a 7 speed double (Dual) clutch automatic transmission. LLZBub is correct, and you are also somewhat correct, almost all paddle shift cars have double or dual clutch automatic transmissions.

Okay, thanks. Didn't know that. I actually test drove the Z4 and my final buying decision was between the Mustang and Z4. It was a nice car but I liked the Mustang better.
