I'm quite sure they do just eyeball the panel gaps when manually rehanging the assembled doors well after the car has left the bodyshop and is in final assembly, that video shows nothing about panel gap measurement, but it shows that even the painting process isn't fully automated which is kind of surprising for 2014.
