Sn95 overheating

alright so if I let my 95 get idle it climbs to the l in the normal on the coolant temp gauge when I blurp the gas it jumps back down also gets cool while driving and if I’m driving it won’t get hot unless I’m stopped somewhere. Just put a 180 thermostat in also a new water pump. I checked flow in the radiator and in the block while I was doing the water pump. I also put a new radiator cap on. The car doesn’t leak any coolant nor is it mixing with the oil. I am also not getting any white smoke out of the tailpipe. the only thing I can think of is maybe air in the system still or the heater core is clogged even tho my heat works and gets hot. Also having the a/c on doesn’t make the problem worse and the car has never overheated.

Any any help or pointers would be appreciated thanks

Sounds like primary fan is bad and other fan kicks on when you're running AC. Unless I misinterpreted something.

Is it coming on when the AC isn't on?
