I just told my coworker the same thing. I'm gonna have to buy a cheap pair of readers to keep here just in case I do it again. Nah. Not saying I wouldn't try it if someone I know cooks it. I'm just not that big on wild game when pig and cow is still readily available. Lol

lol Guess I'm used to cutting stuff up. Always buy whole salmon, chicken, beef and pork loins.

Yeh, I know what you mean. I also like it (chicken) raw. How much can a mild case of salmonella every now and then harm you when you grew up in places like me & Al?

salmonella ain't ****!
I just don't mess with deboned precut chicken and don't usually have the time to debone it myself. And of course mama won't be happy if I just leave the bones in the pot.

That's why you should brine it. Old school. Who trusts processors these days? Another reason to buy it whole.

Have you seen the size of chickens lately? These things are so jacked up on hormones it scares the hell out of me. Whole foods usually has normal size chickens but at twice the price. So beef and pork are still better options. I can do all kinds of dishes with a big cheap pork roast.

Sadly its all infested with hormones. Regardless, I need/enjoy the variety.

Yep. Or just cook it down in the oven with a gravy. Chop it up for a jambalaya or a stew. Love me some pig carcass.
