When I was in the biz our espresso branding was Italia D'Oro - "Italian gold". And man it was! Espresso joints springing up everywhere. But as always, location, location, location.
The biggest drive thru in our Region was 'Lava Java' - right on a split in the highway as you entered the town. The net profit is about $400/5# bag (incl cups, milk, syrups, not incl rent, labor, equip, etc.). This account went through 12-16 bags/week! Cha-ching!!
Stories like those got around and machines (2500-10k+) started flyin'!

The funny part was how the groupies claimed they get so amped on latte's. When the extraction happens so quickly there is less caffiene in a shot than a cup of drip. They were amped alright... on the sugar from the syrups! lol

Between training and setting up/adjusting machines, I've had enough esp for 3 lifetimes. Make mine a thick cup of drip coffee hot and black please.

Because to 'vacuum pack' they have to let the hot roasted beans de-gas (CO2) before they can package. All the way until cool. Otherwise the gas would even break tins. And while that 'folgers' is de-gasing, oxygen has just stolen all that fresh roast flavor and aroma.

You are a veritable coffee encyclopedia Charlie. Have you tried to grow your own. Wondering if it will grow here. Really would like to try. And whatever little device is made on to the bag is there. Came home with quite a few bags so I froze them hoping they would last a little longer. Only got 1 bag left and whatever the peaberry is that I haven't tried.
